0 KM, by conviction. This is how chef David Grussaute defines his support for local products. With this aim, he works with small growers, farmers and fisherman's organisations. This enables a value to be placed on nearly forgotten products from the island that Grussate works with using a technique and know-how resulting in dishes that exude flavours that surprise and captivate our customers.

THE CHEF

David Grussaute (Bordeaux, 72), French chef who carries this profession in his blood, he has a professional background to vouch for it. From France, forming part of the team from the prestigious chain, Relais & Chateaus (with Michelín star), going to Comoros Islands (in Africa), Scotland and finally ending up in Ibiza, with extensive experience as a chef in top level gastronomic establishments. From all of these places, and professional experiences, he has taken their essence and embodied them all in one consolidated project, UNIC RESTAURANT.

Ibiza, an island with a long winemaking tradition, finds its best ally in UNIC's wine cellar. UNIC RESTAURANT transfers to its wine cellar its philosophy that puts local products in the spotlight, where we find the most representative wines form the most significant wineries of Ibiza. Thereby recognising their great effort to obtain wine products of prestige. To complete their offer so that the fusions are perfect and to the guest’s taste, the wine cellar has a significant representation of denominations of origin at a national and international level.

UNIC’s gastronomic proposal is led by chef David Grussaute, of French origin, born in Bordeaux in 1972, with a solid and internationally recognized career.

Throughout his career, he has worked in prestigious establishments, including the exclusive Relais & Châteaux chain with a Michelin star in France, as well as in diverse destinations such as the Comoros Islands (Africa), Scotland, and finally Ibiza.

All this experience translates into a personal and sophisticated cuisine, where the technique and elegance of French gastronomy converge with Mediterranean freshness and the culinary essence of Ibiza. The result is a unique proposal that defines UNIC’s identity: creative, balanced, and deeply connected to its surroundings.
