Very personal version of a traditional dish, made with typical island ingredients namely chicken, lamb, sobrassada, botifarró (black sausage, saffron and Ibizan potatoes.
Tuna and field mustard
Tuna tartare seasoned with a sherbet made from field mustard which tastes like wasabi
Carob and porc negre (dark-skinned pork)

Pityuses, islands of pines
Dessert from different pine-tree ingredients, paying homage to the name of the island. Cones, bark, pine honey, pine nuts and pine needles are all used.
